Important Terms from “What a Certain Visionary Once Said
Glutted: superabundance
Profusion: abundance
Nurture: care, protect, foster
Cree: language of the Cree Indians

Theologians: a person who study about “God”
Cloudberries: the orange-yellow edible fruit of a creeping plant, Rubus chamaemorus, of the rose family, related to the raspberries and blackberries and restricted to northern regions
In paragraph 1 and paragraph 2, the author used “and” at the beginning of a sentence in his essay to imply sense of movement or pace.
In paragraph 3, the author related/connected nature and human in the following sentences: “You watch the movements of the lake which, within one hour, can change from a surface of glass to one of waves so massive in their fury they can - and have – killed many a man. And you begin to understand that men and women can, within maybe not an hour but one day, change from a mood of reflective serenity and self-control to one of depression and despair so deep they can – and have – killed many a man.”
In paragraph 4, the author used “such” so that the audience of his essay will not be directly offended and continue to read the essay.

With reference to your notes In paragraph 1 & 2, the author used " and" , in my point of view the reason can be as follows :
In the essay the Tomson Highway gives the list of items all the time. List means he is engaging the readers. In his list he mentioned a new thing, telling to the reader that you know a lot but still you need to know more.
He often begin the sentence with word “and” to create continuation from one sentence to another. This way writer is trying not to give a break to the reader in his thought and he will continue from one sentence to another until author finally conveys his message. This is a very good method of engaging the reader with the essay and finaly give the message to the audience, what is the sole purpose of writing the essay.
